    Spring rolls & cheese cake!

    I didn't make the spring rolls, but there's a Vietnamese place (kind of) near me in the DFW area that makes excellent ones, and...they're kind of cheap (roughly $0.75 per). They sell 'em by the dozen, and every so often I'll buy 4 or 5 dozen.

    The cheese cake is home made though. It's a no-bake strawberry-cheese cake.

    Following is a rough recipe for a dish my mom made decades ago. I never asked her what she did, but just tried to duplicate what I tasted. When preparing this dish, feel free to make your own changes or substitutions based on what you like. The bottom line is that it must be enjoyable and satisfying to you and those with whom you share it. FYI, I say porkless (vegetarian) on the beans because my wife has a pork intolerance. Note: this is not cooking in any pure form, but rather, combining. NOTE: I prefer the onions to be crisp, and therefore don't sauté them prior to combining.


    2-3 pounds ground beef

    2 large (40 oz.) cans Bush’s Best® porkless baked beans

    2 large (40 oz.) cans dark red kidney beans

    2 bottles KC Masterpiece® Hickory Brown Sugar Barbecue Sauce

    2-3 cans of black beans (Goya is my preference)

    1 large white or yellow onion, chopped

    2 tablespoons vinegar

    2 tablespoons yellow mustard

    4 tablespoons ketchup (or catsup)

    1 tablespoon dark molasses

    ½ cup brown sugar

    1 teaspoon salt

    ½ teaspoon black pepper

    1 teaspoon minced garlic



    1.) In a large pot, combine beans, barbecue sauce, vinegar, mustard, ketchup, molasses, brown sugar, salt, pepper, onion, and garlic. Heat on low, stirring often.


    2.) While heating the other ingredients, brown the ground beef and pour off the grease.


    3.) Add the browned beef to the pot and continue heating and stirring until hot. The pot can also be heated in the oven on low, just be sure to stir often.



    You can substitute grilled steak for the ground beef. A little pricier, but tasty. You can also sauté the chopped onions instead of adding them separately if you like them that way.


    These measurements don’t have to be precise. Taste as you cook, and flavor this to your liking as you go. As with chilis, soups and the like, this always tastes better the next day.


    This turns out to be a low-fat meal, though that is by no means intentional. The baked beans and barbecue sauce have no fat, and you poured most of the fat off the ground beef.

    If anyone tries this, please let me know your thoughts. In my circle this is a very satisfying meal, and is often eaten with chips, as a dip almost.

    We gotta clean out the freezer this week. I think I have at least one pork tenderloin, some chicken breasts and misc. fish. Gonna smoke the fish, slow roast the pork and chicken with home-made "kinda hot" sauce for tamales!

    Sunday AM Update: Made re-fried beans yesterday. Froze them and then vacuum packed this AM (portioned into ~ 1lb portions in baggies, froze and then vacuumed packed the next day). Have about 4 lbs of "old" (freezer burned beef) in the crock pot with a puree I made by steeping 3 each of Guallilo, Chile Nego, Japones and 2 chipotles. Will cool then shred. Four to seven chicken thighs thawing for stewing and shredding next. If I find enough pork, I stew some of that. Everything will be frozen after shredding, and I'll thaw and do tamales during the week.

    An air fryer cooked ribeye (don't worry fellas, I didn't dip the steak into the ketchup - That was just for the fries). The steak had so much flavor it needed nothing at all.

    Your standard burger and fries. Cooked medium, but the burger patty had jalapeno cheese and bacon in it, then I topped it with tomato, pickles, spicy bbq sauce and swiss cheese. Served with crispy fries.

    All cooked in the air fryer.

    Per the drunken conversation last night with people from Washington State, Arizona, and South Carolina, this was essentially the consensus. The SC people said the nut can go either way. Everyone agreed its always Puh-con wood, pea-can wood makes you sound like you didn't graduate high-school, but its Pea-can tree haha. Everyone agreed it's always Pea-can pie.

    The perfect Sunday dinner; Pot roast, mashed potato's (with gravy, of course!), corn and dinner rolls.


    I can't take much credit. The crock pot did most of the work, but I did marinate the pot roast for 48hrs before cooking it. I used the same seasoning that I use on my steaks. So it was full of flavor and very tender.
