The wife made a killer green chile stew with potatoes and elk. Very delicious and hotter than the hinges of hell. Now I’ll be settling down on the screened porch with a nice snifter of Armagnac XO. Life is good…the frogs and cicadas seem to agree.

This stuff is amazing!

The one on the left is a standout.

It’s an agave spirit made from rhodacantha in Puebla. The agave is cooked in an erthen pit - dig a conical hole, like it with big rocks, burn a bunch of mesquite and enchino wood to the get the rocks hot, add a layer of agave penca then through in the agaves, and bury for about 5 days to let the trapped heat roast the agave. Then you dig it all up and put the cooked agaves into what resembles a hand made canoe and the are crushed by hand with wooden mallets. They take the crushed agave, add some mountain spring water and put it all in a rawhide animal skin vessel to sit and ferment. 3-4 weeks later once wild fermentation is finished, its distilled twice in stills made from clay pots and its bottled at proof without dilution.

Legit tiny batch ancestral Mezcal made how it was 400+ years ago.

 

I got these two when we were in Cozumel years ago. 1 @ a small Tequila mfg. tourist stop & the other @ huge Tequila bar in town. That's where I saw the Scorpion in one. Wish I bought it just for the sight of it. I don't drink Tequila except in Kamikaze (has been years since I had one).

Interesting. I have never seen a clear whiskey before. I am guessing it must be pretty harsh like everclear?

 

It's also only 4.5%, which makes it a great pint to pull at the pub when Liverpool has a 7:30am game...
