Does anyone know the target number to keep the tire pressure at? Not too much and not too soft.

Depends on tire. Stock tire? 32 or so. Aftermarket? Adjust to taste.

32 on stock size and load rating.

I run my stock nitto terras at 34 for daily driving. Seemed to be optimal for mpgs and handling for me. At 32, they get the vibration at 60. 10k in and they are wearing evenly, etc.

When I go off-road, I drop down to around 19.

Absolutely correct, except when using a different size or load range.

31 cold. Anything lower starts to feel mushy.
