Saw on another forum that the front hub assembly can be used when needing to replace the wheel bearings making the job bolt-on rather than pressed on. Can that same thing be done with a rear wheel? Installing a complete rear wheel hub assembly to avoid pressing on the bearings?

No. The fronts and rears have to be pressed on.

The front hub assembly is HUGE on these cars.
