Mexican style stuffed peppers

    These "Mexican stuffed peppers" were REALLY good. Here's the recipe for 8 of them:
    4 large Poblano peppers, sliced lengthwise, seed and veins removed.
    1 cup grated cheese (Jack, cheddar or Mexican mixed)
    1 lb. good chorizo (we use home-made using Fiesta Chorizo Mix from Amazon or Johnsonville).
    6-8 eggs, beaten and uncooked (Amount varies according to taste)
    1/2 cup Queso Cotija (grated fine)
    1 small sweet onion, diced.

    Brown chorizo with onion. When mostly brown, add eggs and scramble with chorizo (I add a little Fiesta chorizo mix as they are cooking). Remove from heat.

    Stuff peppers with chorizo-egg mix. Sprinkle with grated cheese, then Queso Cotija. Broil in a shallow casserole until shredded cheese is slightly brown. Garnish with fresh cilantro and sour cream. Taco sauce if desired.

    I've a couple of ripe avocados, so I might do guacamole instead of sour cream.

    Guacamole:

    Two-three-four avocados (depending on size and size of batch==modify proportions as needed)
    1/4 sweet onion diced fine (or one Tbls dried onion flakes)
    One Tbls. Best Foods Mayo (Use Miracle Whip at your own peril!!!!)
    One tsp. Key lime juice (more to taste)
    1/4 tsp. Lawry's Season Salt (or, your favorite)
    1/4 tsp coarse black pepper
    1/4 tsp garlic powder (or chopped garlic)
    Two TBLS finely chopped Poblanos (fresh)
    2 TBLS canned Hatch chilis
    1 TBLS finely chopped Cilantro

    I'll admit the proportions are up to you and I rarely measure things. I go by taste! To spice it up, add 1 Tsp. chopped fresh jalapenos or 1 Tbls. liquid from bottled jalapenos (or Serranos=I tried Habaneros ONCE!!!)
