After unbelievable 170,000 miles, - granted a lot of highway, but still... - I think the time for new brakes is near.

I will replace rotors and pads.

I'm thinking about overhauling or replacing calipers too.

What would you recommend for the above uses?

I'd go OEM pads and rotors but bed them in properly.

I know. I've been rotating and balancing every January and July, keeping an eye on the pads. I have never gotten this from any vehicle.
As I said I don't do stop and go traffic; I'm a Realtor so I get to chose my appointments avoiding rush hours, and I do a bit of highway driving. I am amazed!
I may just do as whippersnapper0 recommends and go back to OEM, instead of trying to change what's worked so well.
