Had to pull my engine for some repairs and I want to ask a dumb question - now that I can get to the wiring - beside replacing the cracked and broken tubing covering the wires - is it ok/good idea to clean the wiring itself once I remove the tubing covering it ? is there a product or any need when I remove the wiring to cover all of the connecting points on the engine (ex injectors, sensor’s, etc. ) to keep water and degreaser, etc out ?

None. Bone Stock. EXCEPT: Brushguard, tow hitch, both welded to the frame. It's good to have friends and a fully equipped garage!
Every electrical connector...EVERY ONE...should have a dab of silicon dielectric grease inside it when it's connected. Every plug. Spark plug connectors, injectors, alternator plug, AC , ECU, you name it. If it has electrons flowing through it, silicon it. That will keep the crud and corruption endemic to the engine compartment out.
Same with in the cabin. The plugs feeding the switches, fuse blocks, etc. It'll keep the water that likes to sneak in around the windshield out. Dust, dirt, etc as well.
Get yourself a BIG tube, or two, of the stuff. It's a small investment that will pay large dividends.

Don't use electrical contact cleaner, brake cleaner and so on to clean the wires inside the wire looms. It'll make the insulation stiffen and crack. Simple Green works great to clean the wire's insulation. What's inside the cracked wire loom materiel.

    Have fun!
