    I live in CA. You cannot throw a rock without hitting a taco place so the thought of Taco Bell is laughable to me. I mastered the taco during the pandemic. Carne Asade with my secret spice recipe. A smattering of refried bean. Tomato, cilantro and avocado on fresh steamed corn tortillas. And some good hot sauce. Got a pic, question or a recipe? Post it up.

    Usually make some fajita veggies, rice, etc. and either make tacos or bowls with it.

    I re-constitute a mix of guallilo, chile negro, pasilla, japon, and chipotle peppers in hot/boiling water. Let steep. Blend into a paste/liquid with the broth. Put beef in crock pot (round roast, chuck roast, chuck steaks, etc.), with slurry & add onion slices, garlic and cilantro! Achiote paste for color and taste. Adobo if you have it. Cumin if you like. Cook on high for 4-6 hours, low for 3-4 hours. Let cool in sauce/juices overnight and shred. You can use it without further cooking (just heating) or fry it up to get it semi-crisp.

    Use fresh tortillas (corn, of course=crisp or soft)), tomatoe, additional onion, cheese of choice, fresh cilantro--radishes, lettuce or cabbage optional. Home-made sauce, of course!

    A variation of this makes a great chile colorado!

    ps: Born in East L.A. (although a gringo) and raised in SoCal. First wife was a chicana.

    pps: The shredded meat makes great enchiladas.

    Tomatoes are ripening, so home made spaghetti sauce today. LOTS of berries, so making a couple of blackberry pies (to pay back the neighbor who helped with adding a "porch" to my tool shed last night). Made a SLEW of enchiladas for an early Cinco de Mayo party. Twenty people over and not an enchilada left!

    Tacos are a go-to camping meal. My favorite is the double-decker (thanks Taco Bell). And Yucateca XXX hot sauce is the religion.

    Yucateca is good! I like Cholula, Tapatio, Salsa Brava or La Victoria (I go for flavor rather than just heat!). El Pato green or Cholula green on eggs.

    Taco Time sounds awesome! Yucateca is definitely a winner for me too! I'm all about flavor over just heat, so Cholula, Tapatio, Salsa Brava, or La Victoria are my go-tos. And have you tried El Pato green or Cholula green on eggs? Delicious! By the way, do you happen to have a good pico de gallo recipe? I've been craving some homemade salsa lately!
