    Just Spent the Last 3 hours? bottling 12 gallons of My 2019 vintage Cabernet Sauvignon wine made from Lodi CA grapes. Ended up with just a little over 43 bottles might of had 44 bottles if I would have quit taking samples to make sure it is good... It was slow fermented in 6 gallon Glass Carboys bottles for 3 month then one batch was transferred to 6 gallon French Oak barrel and the other 6 went into a 6 gallon Hungarian Oak barrel for 3 years.

    Now that it is bottles it will get labels made for them and down into the cellar it will go and rest for a year or more.

    Actually the work part is easy except really really have to be very clean about everything.
    The hardest part is to leave it alone while it is fermenting because it smells just like Fresh baked bread just pulled from the oven and the temptation is to go pull the Air-Lock and get a nice smell of it and if you do you can ruin the entire batch just like that

    Got some new Barrels Yesterday 1 French Oak 6 Gallon, 2 American Oak 4 Liter and 1 little guy that I need to measure how much it really holds all of them are Charred on the inside ready for the water test, Sterilization then get filled.
    The 6 gallon will get first batch of Merlot that I have made the 4 Liter Barrels I am trying my hand at Dessert Wine and the smallest barrel? thinking maybe filling it with Some Jack and let it sit to see just how it works out.
    This is not the first time I have messed around like this to see if we can get something worthwhile.

    like I have a large bottle of Grey Goose Vodka laying down in the cellar with whole vanilla Beans in it that has been there since last Year just after New Year that got left at my house unopened so I had 5 whole vanilla beans stuck em in the bottle and recapped it.

    Nice! I have never made daiquiris myself until recently. I always thought of them as a fruity frozen blended drink. But, a standard lime/ Syrup/ rum daiquiri is a deceptively strong and delicious treat!

    Yeah, they’re powerful and they taste so good you want to drink a lot. Maybe the frozen version is more diluted and it slows you down a little.
