Planning to stock up on engine oil, will be stored in my garage, and during summer, it gets to 120 °F inside (thank you Arizona).

120 degrees doesn't even tickle what oil gets up to in your engine.

As long as it doesn't get contaminated it should be fine.

When I bought my ranch a few years ago I found a few cases of Castroil 10/30 in a shop from the early 90, the cardboard was falling apart but the oil looked as good as the day it was put in the bottle. I use it in my mowers and atv’s, haven’t had any issues at all oil wise.

If it sits for a while, just shake it up for a couple minutes before pouring it in the engine.

Yup additives settle out eventually. As long as it’s sealed, oil naturally collects moisture. One of the reasons why they say to change out oil in your engine at certain time frames
