    One of my favorite camp meals is "Camp Hamburger".
    (feeds 2-3 campers)

    • 1# 80% lean ground beef
    • 1 can sliced (or whole) new potatoes, drained
    • 1 small can salsa verde or Rotel
    • 1 small can diced Ortega chiles
    • 1 small, sweet onion, diced
    • 1 handful (about 1 c) grated Mexican cheese blend
    • Garlic powder
    • 1-2 tsp Dried oregano
    • Salt and pepper
    I like to use a cast iron Dutch over, but a covered skillet will work, too.

    Brown the ground beef in a little oil, the drain most of the excess fat.
    Add the diced onions and salt/pepper to taste and brown some more
    Add the garlic to taste (more is good and helps prevent vampire intrusions at night)
    Add the Ortega chiles, oregano and new potatoes and stir around for a few minutes
    Add the salsa verde or Rotel, stir into mixture, then cover the mixture with cheese and cover the Dutch oven/skillet and let cook for about 15 min (depending on ambient temperature and altitude). You want the cheese to get nice and melty on top of the meat
    Remove from heat and let rest for a couple of minutes, then serve and enjoy.

    1lb ground sirloin-browned
    Mix in 3-4 cans of campbells vegetarian vegetable soup
    Shredded cheddar on top.

    simple, easy, and delicious.

    For breakfast, I like to make biscuits and gravy, with scrambled eggs and choice of meat, or maybe a breakfast casserole (similar to a quiche or frittata sans crust).

    For lunch it's usually something easy, like a sandwich and chips.

    For dinner, I might make carnitas, arroz con pollo, steak and baked potato with broccoli or some other vegetable. I might bake a loaf of bread to go along with it.

    Good grief........most of you eat better at camp than I do at home.........
    Normally dispersed camp, but if you folks would divulge campground/campsite info into the summer, I'd be happy to park next door and hopefully have you take pity on my pork and beans from the can. Cold. No utensils.

    Many of you folks take it to an art form (Son-In-Law is your sort, always good to have along). Detected it with @Noodles Pancetta & dog combo and his condiment tray. @Stones Brookies had my mouth watering for its freshness/simplicity.......then zoomed in on his plate and see.........is that Baklava and some sort of cheesecake????? Dang guys!
    I'm plain lazy when it comes to food selection/prep, but admire you folks who enjoy the culinary side of camping as much as the outdoors. Just do me a favor and camp downwind.

    I don't really differentiate between cooking at home and camp cooking. I've spent a lot of time cooking outside, using Dutch ovens, camping or in the back yard. I spent a considerable amount of time cooking that way for the family, at home. It translates well to camping, and in my opinion, anything you can cook, you can cook in a Dutch oven. So, if I like some specific meal at home, I have no problem cooking it while camping. It's just cooking, same as at home.

    I try to keep it simple so I have more time to fish and wander. I splurged on a portable fridge and fill it at a high end deli before I head out. This gets me delicacies like the cheesecake and baklava shown, along with grape leaves, egg rolls, pasta salads, smoked salmon, garlic chicken, you get the idea... No cooking (except for the brook trout, of course). Great Grub that I just pull out and eat. I bought a plastic coffee press at a backpacking shop and have some fresh beans coarse ground before I leave. This gets me good tasting fresh coffee and all I have to do is boil water. Coffee press is in pic.
